Don't fall into the trap of assuming that because something is "natural," it can't cause harm. As for nitrates, the evidence is squishy, but if a potential carcinogen can be easily avoided, I see no issues with doing so. They are not cancerous. If you do the research you will find that our saliva is full of them.
